This non-alcoholic drink was inspired by my love for OLIPOP Strawberry Vanilla Soda and will easily become the favorite of any strawberry lover. I like to pair this perfect drink with any appetizer menu, charcuterie board or grazing table.

- Ginger Juice: Infusing fresh ginger juice to the muddling mixture of strawberries and basil is a game changer. It creates this beautiful pink/red color and ginger-infused strawberries are delicious. You will not miss alcohol one bit with the zip and spice of ginger. You can make homemade ginger juice or purchase bottled juice from most grocery stores. I’m seeing single-serving ginger shots in almost every grocery store lately. This would be perfect for making this drink.
- Fresh Basil Leaves: Introduce a touch of aromatic freshness by adding 1 to 2 fresh basil leaves to the strawberries and ginger before muddling, infusing the fruity mixture with a delightful herbal essence. Alternatively, mint serves as a delicious substitute if basil is unavailable.
- Ice Cubes: You can’t have a summer drink without ice. incorporate your favorite ice to lend a delightful texture to this fizzy concoction. I love to experiment with different types of ice molds like flowers, butterflies or honeycomb shapes to elevate the beauty of mocktails.
- Lime: Fresh lime juice perfectly balances the spicy ginger and sweetness from the strawberry soda. I recommend using fresh squeezed lime juice, You’ll get the most juice from limes that are slightly soft when squeezed. If you can’t find fresh limes, bottled juice works well too. Keep in mind that lime juice will loose some of its tang and nutrient density in processing.
- OLIPOP Strawberry Vanilla Soda: Feel free to explore a variety of flavors by substituting OLIPOP Strawberry Vanilla Soda with other enticing options such as Banana Cream or Cherry Vanilla.
- Canned Coconut Cream: Achieve the luscious texture and slightly creamy consistency of this drink with a splash of coconut cream. Prior to opening, be sure to shake the can thoroughly to prevent any clumping. Freeze any left over coconut cream in ice cube trays for future use.
- Freeze-Dried Strawberries: Crush up some freeze dried berries to create a beautiful glass rim option
- Lime Wedge, Edible Flowers, Strawberries, and Fresh Basil: Elevate the visual appeal and add a touch of elegance by garnishing the completed drink with a lime wedge edible flowers, fresh strawberries, or basil leaves—or a combination thereof. First, add ginger juice, strawberries and basil leaf to a double old-fashioned glass

Next, muddle ingredients with a muddler or wooden spoon

Muddle until juice turns creamy red and strawberries are juicy chunks

Next, fill the glass with ice and squeeze half a lime over the ice

Next, fill remainder of the glass with Strawberry Vanilla Olipop Soda (see substitutions)

Then top off the drink with a teaspoon of coconut cream (measure with your heart ❤️)

The coconut cream will add a creamy and dreamy texture

Pro Tip: Add ¼ cup of coconut cream to a small bowl. Use frother to quickly fluff and add a little spoonful to top of mocktail.

- Olipop Strawberry Cream Soda: Olipop can be found at major grocery stores, Target, Walmart, Sam's, Club, Instacart and Amazon. I’ve found Olipop on sale at Aldi. If you're having trouble finding in your area try using the Olipop Store Locator. Olipop Cherry Vanilla would be the best Olipop substitution. You could also try Olipop Banana Cream.

- Spicy: add a little tajin to part of the glass rim
- Next Level: add a little strawberry juice or tiny edible chamomile flowers to your ice cube molds for added taste and presentation
- Kid friendly:
- remove basil from the recipe
- add a few yum earth or homemade gummy bears to a kid-safe toothpick and place in drink or on glass rim

INGREDIENTS
- 1 oz ginger juice (homemade or store bought) (use more for extra zip)
- 2 large strawberries cut in quarters (use more if strawberries are small)
- 1-2 fresh basil leaves (substitute 2-3 fresh mint leaves )
- 1 lime (cut in half. use extra for garnish)
- ½ cup Strawberry Vanilla Olipop Soda (see substitution section if needed )
- 1 teaspoon coconut cream
- ice cubes of any shape
- crushed freeze dried strawberries (optional)
INSTRUCTIONS
- Rub fresh lime juice on part of glass rim and rim glass with freeze dried berry powder.

FAQ
Can I use cream of coconut instead of coconut cream to top off this drink?
Typically coconut cream and cream of coconut are not interchangeable in recipes. Cream of coconut is sweetened and has a syrupy texture. Coconut cream is not sweetened and can easily be whipped or frothed to top off a beverage. If you used Cream of coconut in the recipe it will end up being a much sweeter drink than intended.
